Aging Notes: What a pleasant surprise this wine has been. I was very concerned early on about what I thought of as flabby acidity. However, in spring of 2001 I was invited to dinner at the home of friends who have all the KEEGAN wines in their cellar. The invitees were mutual friends from the East Coast and the hostess proudly announced the first course, a conch in a lime vinaigrette matched with the KEEGAN Chardonnay. I was very pleased until I saw the vintage, 1995. I tried to excuse myself, run down to the Silverado Trail and get hit by a tourist. But, lo and behold the combination was fabulous. Certainly the dish was packed with acidity, but in fact the wine stood up rather proudly on its own. It is just a reminder that ageability is a tough one to gauge.
